Why can't Jess and Vernal tell the same story about what happened to Deorr?

In Jess and Vernal's handwritten statements. Each of them has written at least two separate statements and not only can they not tell the same story twice, they contradict each other's story as well, such as: Who cooked breakfast, who buckled the baby in the car seat when they woke up to what time they left to the store, who they saw and the time at each location visited and so much more.
